Who did I interview? How do I know him? For my assignment I interviewed Mark Tormey. Mark is the managing partner for many Lettuce Entertain You Enterprises restaurants. He is my boss and I have known him for 4 years now.
How long ago did he start in the business? Mark started in the business when he was in the 7th grade working as a dishwasher. They had no dish machine to use, only a three compartment sink, soap and water. By the time he was in high school he became a waiter. As he progressed to college, he worked in restaurants to support himself. Mark’s first management position in 1975 was for the Hyatt Hotel chain. He did not like this position or necessarily working for someone else so he moved on. From there he interviewed in 1978 with both Morton’s Restaurants and Lettuce Entertain You Enterprises (which at the time was in its infancy). Mark took the job with Lettuce and went on to manage such Chicago institutions as Jonathan Livingston Seagulls in Chicago’s venerated North Shore, for a year and a half and then The Pump Room where he became a managing partner after 5 years and thus became an entrepreneur. From there Mark and his partners conceived the concept of Maggianos Italian Restaurant loosely based on an eating experience Mark had in New York at the acclaimed Carmines. Mark also helped conceive the popular Corner Bakery chain but has, since 1994 sold both the Maggianos concepts and the Corner Bakery restaurants to Brinker. Brinker is another successful restaurant corporation in the Midwest and dotted throughout the United States as is Lettuce Entertain You Enterprises.
