The challenges of maintain a healthy well balanced diet for families with limited financial resources may be overcome with education, preparation, organization, and effort. It has been proven in African Americans and Latinos that maintain a healthy well balanced diet is very hard due to limited resources. Low income families are at double risk for chronic diseases and many other health issues. Low income has an effect on how much money families spend on food and the types of foods they purchase for their families. Managing a very limited budget, families had to give up buying more expensive foods that would be a benefit from their risk of hunger and obesity. Families or people with low incomes, reported as having lower levels of consumption of fresh fruits, vegetables, non fatty meats, grains, and fibers. They have also reported that lower income have lower dietary intake of healthy foods. Studies have shown that the rich eat healthier and are more accessible to healthier foods than those of a lower income. They also tend to have better food varieties than in lower income areas. If the food is not appealing, then lower income families are less likely to purchase the foods. There are arguments that healthy unprocessed foods can be cheaper.
Education, nutrition, budget shopping for health foods and good cooking techniques are very important for low income families when trying to maintain a healthy well balanced diet. There are programs out there that teach people who are at risk for hunger and obesity how to prepare meals that are healthy and affordable, even when their monies are limited. They also help low income families establish and maintain a healthy diet. Cooking demonstrations are available of healthy meals. Pasta dishes are nutritious and easy to make and a lot of people like pasta. Another healthy food that tends to be inexpensive and also healthy is potatoes.
