Hong Kong's fast-food industry: an overview.

Business continues to boom for Western quick-service operations in Hong Kong, including for those that see the territory as a jumping off point for capitalizing on the expanding mainland-China markets. But it's no longer just Western burger, chicken, and pizza chains that are competing in the market place: several Hong-Kong-based Chinese-style fast-food companies are growing quickly throughout the territory and elsewhere.
Over the, past decade one of the fastest-growing business sectors in Hong Kong has been the fast-food industry. According to a report by the Hong Kong Department of Census and Statistics,(1) fast-food receipts increased from HK$488 million (US$63 million) in 1980 to HK$6,422 million (US$834 million) in 1991 (see Exhibit 1). During the same period the number of fast-food restaurants jumped from 377 to 1,040 (see Exhibit 2), and the number of employees in the fast-food industry increased from 3,848 to 22,247 (see Exhibit 3).
With the rapid economic development in the Pacific Rim over the past 20 years, the lifestyle of Hong Kong residents has changed dramatically. One change involves an increase in dining out. In 1990 the average Hong Kong household spent 56 percent of its food budget on eating out. That is twice the level of the Japanese (25 percent) and three times that of Americans (17 percent).(2) According to a 1991 report, 90 percent of the population ate out at least once a week, with more of those people visiting fast-food outlets than ever before.(3)
To meet the growing demand for convenience products, major international fast-food chains brought their concepts to Hong Kong. By 1993 the fast-food-restaurant segment constituted 13 percent of the restaurant market [ILLUSTRATION FOR EXHIBIT 4...
